5 Simple Summer Meals That Feel Good (and Don’t Drain Your Wallet)

In the summer, like other people, I prefer lighter meals.  Unfortunately, my budget doesn’t like the grocery bills that will come with them.

If you’ve been trying to eat well without overthinking it, or spending too much, here are the kinds of meals that have made my life easier. No complicated steps. No hard-to-find ingredients. Just simple, satisfying food that works on slower days.

1. Tomato & Cucumber Salad with Herbs

This is the kind of dish that tastes like summer without trying too hard.

What you’ll need:

  • Fresh tomatoes, chopped
  • Cucumber, sliced
  • A little red onion (optional)
  • Olive oil
  • Vinegar 
  • Salt, pepper, and any fresh herbs you might have
  •  

How to make it:
Toss everything together and let it sit for 10–15 minutes so the flavors blend.

Why it works:
It’s refreshing, lower costs, and goes with almost anything.  Or, it can stand on its own when you don’t feel like cooking.

2. Lemon Garlic Pasta

When the day gets away from you, I suggest this as your backup plan.

What you’ll need:

  • Pasta
  • Garlic
  • Olive oil or butter
  • Lemon juice
  • Salt and pepper
  • Optional: grated cheese or parsley
  •  

How to make it:
Cook the pasta. In a pan, gently heat garlic in oil or butter. Add lemon juice, then toss in the pasta. Finish with salt, pepper, and a sprinkle of cheese if you like. Honestly, I have to admit that I love cheese and do more than just sprinkle!

Why it works:
It’s inexpensive, fast, and tastes great without requiring a lot of effort.

3. Black Bean & Corn Bowl

This is one of those meals you can build from what you already have.

What you’ll need:

  • Canned black beans (rinsed)
  • Corn (fresh, canned, or frozen)
  • Cooked rice
  • Lime juice
  • Salt, pepper, and spices (like cumin or chili powder)
  •  

How to make it:
Mix everything together while warm, or serve cold like a salad.

Why it works:
It’s filling, budget-friendly, and flexible. You can add avocado, salsa, or leftover veggies if you have them.

4. Sheet Pan Roasted Vegetables

This is the use whatever is in the fridge solution.

What you’ll need:

  • Any vegetables (zucchini, potatoes, carrots, peppers, onions)
  • Olive oil
  • Salt, pepper, and simple seasonings
  •  

How to make it:
Chop everything, spread on a baking sheet, drizzle with oil, and roast at 400°F until tender and slightly crisp.

Why it works:
Minimal prep or cleanup, and a great way to avoid wasting food. And, these days, who can afford to do that.

5. Classic Egg Salad Sandwiches

Simple and familiar.

What you’ll need:

  • Hard-boiled eggs
  • A spoonful of mayonnaise or yogurt
  • Mustard (optional but a must for me!)
  • Salt and pepper
  • Bread
  •  

How to make it:
Mash the eggs, mix with the rest, and spread onto bread.

Why it works:
Protein-rich, inexpensive, and perfect for those days when you just need something easy.

A Reminder for Summer

You don’t need elaborate recipes to eat well. Sometimes the best meals are the ones that come together without stress. The ones that leave you with a little more time and a little less pressure.
